Summer Berry Bread Mix
1 Package of Summer Berry Bread Mix 1/2 Cup of butter, melted
3/4 Cup of water
1 Cup of powdered sugar
1 1/2 Teaspoons of almond extract
1 1/2 Tablespoons of milk
Preheat oven to 325 degrees. Grease and flour a 4 x 8 inch loaf pan or a 8 inch bundt pan. (For best results use a metal pan). Empty contents of package into a mixing bowl. Set aside the package of coconut. Add melted butter, water and eggs. Mix thoroughly with a spoon. Add contents of coconut package and mix until evenly blended. Pour batter into prepared pan and spread evenly. Bake until done, 60-70 minutes for the loaf or 40-45 minutes for the bundt. Test with toothpick. Allow to cool for 15 minutes in pan on a cooling rack. Give the bread an additional 15 minutes to cool before slicing. Dust with powdered sugar or drizzle with almond glaze if desired.
Almond Glaze: In a small bowl, combine powdered sugar, almond extract and milk. Mix until smooth. Using a toothpick, pierce holes into top of cooled bread. Drizzle glaze over bread and allow to drip down sides.
